The Weatherman's Pork and Pepper Stew

The Weatherman's Pork and Pepper Stew - a nice winter warmer

Ingredients

  • 2pts chicken and vegetable stock
  • 5 (or more mixed peppers
  • 1 large onion
  • 2 thick pork loin chops - or whatever cut you want
  • Salt, Pepper, Paprika and Tomato Puree

Quick and easy camp stew

Cooking Instructions

1) Roast the mixed peppers in a hot oven for 15 minutes. I normally use a mixture of red, yellow and orange bell peppers but you can substitute for sweet peppers if you prefer,
2) Make up the stock with a couple of chicken stock cubes, 1 vegetable stock cube, 1 teaspoon of Paprika and a teaspoon of Marmite (food of the gods),
3) Add a few twist of freshly ground black pepper - not too much at this stage,
4) Bring to the boil and simmer,
5) Finely chop a large onion and fry gently in a little vegetable oil until soft,
6) Add to the stock and simmer,
7) Cut off all the fat from the chops and cut into cubes,
8) Fry in a little vegetable oil and half a teaspoon of Paprika,
9) Add to the stock when cooked,
10) Peel and chop the roasted peppers and add to the stock,
11) Simmer for about 15 minutes,
12) Gradually add Tomato Puree until you get a thick soup like mixture,
13) Taste and add salt and pepper if desired,
14) Cook for a further 15 minutes.

Serve straight away with nice chunks of fresh bread or freeze for later re-heating.
