Your couscous isn't usually GF as it's made from wheat.
We have 14 folk to dinner regularly; one is Coeliac and therefore GF, one is vegetarian & one is lactose intolerant. (The fussy ones don't get invited!) We do a pasta dish of some sort using GF pasta and substituting tins of green lentils for the minced meat, exactly the same recipe otherwise. No-one bothers that it's not meat. Sometimes we replace the pasta with rice and/or mashed potato. We put bowls of grated cheese onto the table for people to add their own - we grate it because ready-grated cheese often has wheat added to bulk it up and it's not GF.
However, it won't faze a good caterer, yours look like they've suggested a good menu. At least you don't have any people with a nut allergy!
