Im not sure if tgey still make them, but we looked at buying a Comanche Montana folding camper before we settled on returning to caravanning when my husband retired. These were the 'pram hood type' no peg units which had a solid floor and space for a camp kitchen in the living area.
There was an option to add a peg down awning, but we planned to use the second bed pod for storage, as like you, we wanted to use it as a 2 berth, not a 4 as intended.
The announcement that a new grandchild was on the way finally prompted us to return to being caravan owners instead, but l still enjoy spending time on site during the day inside my daughters tent when they come along with us.

I have a Comanche Montana and its perfect for quick no peg pitching, BUT it does not have a kitchen. I have a folding kitchen, with small twin hob and grill. I can use it inside the fold out part BUT smells need to be considered. Its fine for making a cuppa though. It has storage on top of rack for carrying extra kit. I will try and attach some photos.
I also have the awning which is for longer trips and required pegging. Its very similar to the ALPHA you mentioned. Its billed as a 4 birth but is perfect with loads of room for 2. Dogs will have some room inside as well as you can see from my photos.
