For that money you could get a mid-90s Peugeot Boxer. That's what I'd get. I've had 4 campervans, two Renault Trafics and two Talbots. The Boxer is the newer version of the Talbot, I think they changed in 1994 or thereabouts. You can get everything on them, toilet, shower etc., they're comfortable and they're reasonably economical. The best conversion of that type of van, in my opinion, is Autosleepers.
T4 for best spares availability UK & also Europe if you are going abroad. If you mean you want a fully equipped factory built campervan from one of the well known converters then £6-8k will only get you 1990s & spares supply is getting patchy for vehicles this age, you could find yourself off the road for want of one small unobtainable part.
A quick look at Autotrader suggests that you might pick up an early 2000's Peugeot Boxer based van. Autosleepers used to have a very good reputation, but I had a look at a few last year and they hadn't worn well at all.

Hi...We only switched from tents 8-9 years ago and since then we've had 3 "proper" vans (one '03 Transit based Duetto and 2 coach-built MHs), our current van is just a basic low roof Toyota camping(not camper)van..
Firstly, I'd say try to pin down what you'll want to do with it- How many will it need to accommodate?- How much on-board kit do you really need?- Do you want/need it to be dual purpose?- etc etc...
Once loaded with "going away stuff", anything VW Transporter/Bongo/Hiace sized can be very snug to "live-within", so all will *benefit from using some form of outside shelter/tarp/awning. So, with that in mind would it need to be fully fitted out?
With the VWs/Bongos etc we see on 'sites, most of the living and cooking seems to be done outside; under a tarp or in an awning, with the vehicle only really be used as the "bedroom"....it's how we use ours..
....as your other half is handy/practical, would spending the money on a tidy, newer (windowed?) van and fitting it out with a detachable/lift-out kitchen pod(that could also be used in an awning) and a fold-down bed, be an option ?...
Edit- Just to add, we switched from the "proper" vans because they were too "single-purpose" for our needs...and the coach-built Mhs were just too "delicate"....
