Going to be campervanning thru France this summer and I am going to be taking some expensive technology with me (a Macbook pro and an audio mixer for djing) - do French campsites tend to have safes where you can drop off valuables at the counter or in lockers?

Not the ones I've stayed at. Reckon you'd be better off installing a hidden/secure box in the van. TBH you're more likely to be robbed off site than on anyway.
How old is your van? Old ones 90s or older are easy to break into & can be a target because of that. Don't leave van unattended in large town hypermarket car parks. Shop at small supermkts in small towns. Rural campsites are safe enough but municipal campsites in towns can be a target for thieves. Really it's common sense. If it looks dodgy it probably is.
I've never seen a campsite with a safe. Would you trust it anyway? High end devices are thieves prime targets so don't let it out of your sight.
