1. I don't necessarily think it would be safe.
2. It would just be another piece of kit to cart around.
3. Cook what you can with the facilities you have.
Can't say about the cool box. Do you have a fridge?
You can get a few things into the freezer compartment.
More to the point, unless you plan to spend time away from
civilisation, you can buy fresh food every few days.

I met a Belgian motorhomer who fried chips every day. He used an ordinary chip fryer on the site ehu. You would need to check wattage of chip fryer. If campsite ehu was 10amps you could use up to a 2kw fryer.
Halford cool box is just a peltier type cooler. Cools only about 18deg below ambient. Ok for drinks but I would not keep meet in it. If you want a proper portable fridge you need to spend a lot more. Look on Waeco website for portable fridge/freezers.
The Belgians make very good chips -especially when served with mussels. I get by with making oven chips in the van, but my Smev oven is soooo slow, it takes a lot longer than at home. Anyway, my van is fairly small, so I don't carry gadgets I can live without for a few days.
As for the coolbox, if it kept the contents at 18deg below ambient, that's pretty good, though hardly a deep freeze. It's easy enough to keep meals for 3 or 4 days in most caravan fridges (even with a tiny freezer compartment).
Perhaps it would be possible to make a highly insulated cool box that would keep food frozen for several days.

If I was off hook up and found myself needed to fry chips(I wouldn't ), I'd at least be doing it outside on a camp stove. I wouldn't want a pan of near boiling oil bubblin' and spittin' inside the van..
..and I'd rather a decent passive coolbox, than a cheapie "powered" box, especially if it's only for a few days at a time.
Our old(10-12 years?) Igloo coolbox, keeps our pre-frozen homemade curries/chilies solid for 3-4 day festivals(*and it's not unusual for us to be returning home on the Mon, with chunks of ice still in the pre-frozen water bottles).
..and also I wouldn't want to be having to leave an electric coolbox running too long, not without the engine running..(or additional batteries..or solar generator etc..)
So if you need something "more", then you'll need to spend a lot more money...
We use a Phillips air fryer never had a problem in 2 years with ehu. We use Mac Cains or aunt Bessie's oven chips straight from freezer 180 degrees for 12 /14 mins no smell after either. Can do sausage onion rings carrots parsnip roasties as well. Also have 2 people slow cooker and halegon cooker but don't take all at same time. Use slow cooker in winter months when out visiting somewhere. Put full Sunday dinner in halegon same. Air fryer goes every time cooked muffins in it once just to try wife likes bread or battered fish straight from freezer cooked. Only use gas oven to heat ready cooked super market meals usually with some sort of salad on plate, that's why I hop everywhere not walk.12volt microwave total useless chucked it got great 750 from Asda for £34 still going strong after 4years next week..
