Can anyone advise is it much more expensive to insure a motorhome that just goes over the 3m height? ie with a Luton bed. Also with a higher than 3500kg chassis? I notice most seem to stay under this but don't have big payload allowances when carrying 4 passengers. I do have a c1 licence that allows a heavier vehicle but wondering if it has a huge impact on insurance?

I can't say that I've ever heard of any sort of arbitrary "3m high threshold" being talked about...? (although as both of our coach-built MHs have been low profile, that's not to say that one doesn't exist?).

Re: Weights. Our previous MH was bought(used)and insured as 3500kg(as that's what was on the V5) but I later found that it was actually 38500kg('twas an error on V5)and I just notified the insurance(Safeguard) and they just amended their details, with no additional charge.So presumably it doesn't make that much difference?

Do be aware that, although I'd agree about the lack of payloads for a family at 3500kg, any raise in the "gross weight" is not always translated to any great capacity in the axle limits...and it is these limits that can/do also cause issues.
(usually the rear axle, on a large-ish CB MH, especially if it has a lengthy overhang and/or a "garage" )
