Been looking at motorhomes and found a few that meet our requirements. Lutton top around 25ft long. Are the ones with this spec and 2litre diesel suitable for hilly areas.

It depends on the age of the vehicle. Make sure it is a turbodiesel. You cannot expect an older vehicle to have a fantastic performance but it should be adequate. As mentioned there is a big difference between a vehicle say a couple of yrs old & one say 15-20yrs old.
I depends what you want. Not all of us are bothered by slow progress up hills. Those behind can wait. Driving my car/caravan on mountainous French roads does tend to cause the locals to do suicidal overtaking manoeuvres I find. Don’t bother me but it may bother you.
So what am I supposed to do then? Not tow my caravan up hills? Or is it ok to cause a queue of traffic if I worry about the poor folk behind being delayed rather than not giving a FF about?
Tbf when I get held up by French drivers in their smoky old 1990s motorhomes It don’t bother me & I doubt it bothers them.
So it’s up to the op as to whether it bothers them.
If this is your first MH, then you're really jumping in at the deep end (though of course you may be experienced in driving large vehicles). For something that size (and weight - you don't say how heavy), I'd definitely want a turbo Diesel around 130-150 BHP.
