Is your water too hot or not hot enough?
Ours has an Eco setting and a Hot setting, on the control unit that does the warm air heating. It’s the same whether it’s on EHU or off-grid on gas. The Eco is pleasant for washing hands but not hot enough for dishes.
Our old Autosleeper (94 reg) just clicked off at dish washing or shower temperature but there was no way to control what that temperature was.
Otherwise check your handbook, I don’t think there’s a thermostat at the heater itself but I could be wrong.
If no one else can confirm that there is a thermostat, then you’ll just have to add cold water. Or turn the water heater off half an hour before you want to use it - the water will get tepid quickly enough.
If it is the same as those heaters fitted in caravans then I don't think there is any means of reducing the temperature. I suspect that is intentional to kill off any nasty bugs that might otherwise lurk in the system.
Not a problem anyway, just set the tap lever a bit more to the right!

Fit a thermostatic valve in the pipe work. I do this on all I have owned, then keeps shower at constant temperature and also saves water when not wasting whilst setting hot&cold to get temperature as desired.
You should be able to check the water temp coming out of the taps with a cooking thermometer, it probably won't be precisely 40C or 60C, but close enough, significantly above that would indicate a fault. It is possible the fixed temp thermostat has failed and the boiler is literally 'boiling'! That would not be good as apart from shortening life of boiler parts it would also be heating water continuously as never tripping out on reaching set temp!
I'm struggling to think of a caravan/camper I've seen that didn't have a mixer tap on every outlet, so getting water of the right temp for use shouldn't be a problem. Temps above about 41C are getting uncomfortable to the skin and above 45C risk scalding. With only 10 litres volume of hot water in the boiler/tank, it's necessary to use a mix of hot and cold water for say a shower to get sufficient volume of comfortable water overall to complete the task, rather than supply only heated water at the comfortable temp, hence the water being heated to above comfort levels.
Our motorhome is 17 years old ( we have had it from new so I know it works as it should) When heating the hot water on mains electric the temperature can not be adjusted, however, if heated by the gas supply, then the temperature can be adjusted up or down. I hope this helps.
