We've used plastic pipe in our bathroom, John Guest I think was the make, even on the power shower never had a problem been there for about eight years now I found it easy to work with. Use the fittings with pipe inserts and a clean cut.

Plastic pipe in a cavity without metallised tape behind doesn't show up with a detector. Don't ask how I know this.

No need to worry about using plastic pipe near the boiler, it's downstairs out the way.

And from what you're all saying, I think copper will be safe enough to use hidden away under the bath and to use on the thermo' shower too, so I won't be worrying about volume / pressure.
