I like mine medium boiled, I slice the whole egg lengthways with a sharp knife, scoop out the egg and put it on hot buttered toast and squash it, a tiny crumble of Malden Salt flakes and a twist of white pepper. Scrumptious!

We always turn the empty shell upside down in the eggcup as well.......but we make a hole in the non-smashed end so that they can't be used as boats by witches!!

We did it to "save a sailor's life". I suppose we too were keeping the witches at bay.
So Jean, one of our neighbours at Benicassim a couple of years ago needed some eggs and sent hubby Bill to the supermarket for half a dozen.
He came back and Jean hard boiled a couple for their salad tea.
Come the following morning Bill said, "I fancy a boiled egg for brekkie and Jean set to.
However, despite only cooking them for three minutes, the eggs were solid, hard boiled and not runny, disaster.
Jean checked her's and, would you believe it, her's were the same.
Went to the remaining uncooked eggs and one of them fell on the floor with a thud. The egg bounced but didn't splatter.
Go on. Admit it. WHO KNEW YOU COULD BUY HARD BOILED EGGS IN SPAIN!!!

Best eggs I have tasted are the free ones from her free range hens the owner of a campsite gives me from time to time...Totally different taste to the shop bought ones...
Fresh enough....Usually laid that morning...Only health warning I get is..."Watch out for beaks and bones in some of them As the Cockerels fertilize them...And some hens are good at hiding their eggs!!!"......

I like celery salt with mine. Found out by accident when I had run out of salt one time. I often have a couple of boiled eggs for supper (if it's only me), very fond of poached eggs too. Funny because I wouldn't eat them as a child.

You cannot beat free range eggs. I have my own hens, we've had our own eggs for around 9 years now. We share our eggs amongst all our neighbours and they return the favour with veggies from their gardens. My neighbours say my eggs are the best they have ever tasted.
