I have a Cadac Safari Chef HP version, and the lid is good enough as a wok, and I am Chinese who cook a little .

don't think it is the heat that is the issue xs heat denatures oil and can make it harmful to humans - especially olive oil rape seed oil is better for higher temps but not 'severe' heat
I too have been trying to get hold of a decent burner for wok cooking.
First you do need high heat. Use groundnut oil which is for high temp cooking.

As we're all electric in the kitchen, but still have the 22mm feed for the boiler (that's in the same room), could we 'T' off the gas main with some kind of quick release coupling so we could then use the burner off a flexi hose off that as and when??
