The 3008 weighs around 1500 kg depending on the model so you would be towing at just under 100% and i think they have a low nose weight limit.
The Mondeo is a bit heavier, an estate car might be heavier than a hatchback.
The Kuga would be a better bet, kerb weights start around 1580 kg so you would still be around 95%. Later Kuga models weigh around 1700 kg so would give close to an 85% match. I would go for a later, heavier model with auto box, this would be lovely for towing but fuel economy would not be so good but that's the penalty for having a heavier caravan.
We now tow 1500 kg with a SsangYong Korando which gives an 85% match but at a much lower price than the Kuga that I really fancied.

I tow a 2011 Swift Charisma 545 with MTLPM 1486 With a 2010 Kuga 163AWD, returns between 29 to 32 mpg towing & depending on right foot returns around 40 to 45 mpg normal driving the high up driving position is brill & tows with no effort
Kerb weight 1672kg
75% of kerb weight 1254kg
85% of kerb weight 1421.2kg
95% of kerb weight 1588.4kg

Thanks everyone. I'm getting different weights for the 3008 one site says 1535kg another says 85% of the kerbweight being 1450kg so kerbweight would be 1700kg or so.
The 3008 weighs around 1535 kg depending on the model, I expect your 85% figure of 1450 kg comes from a website such as towcar info which works on a random guess at a loaded weight rather than the kerb weight.
The Yeti mentioned above only weighs about 1500 kg so you would be towing at almost 100%, some of the earlier Yeti models weigh considerably less.
Watch out for gearbox problems in the Kuga. Guy at work had one in & out of garage for nearly a year, ended up taking a massive hit on it and traded it in.

Both the mondeo or Kuga will be fine for this, i had a 2011 mondeo Tit x and towed a 1560 kg coachman with it.
Kerbweight of mine was 1705 kgs estate is 20kgs heavier.
It's not though what Boab would refer to as a 'big 4x4'.

I test drove a brand new kuga when I was looking for a new tow car & was really impressed. However the price tag was somewhat jawdropping. If you're a member of the caravn club you can get £6k off the screen price of a top of the range santa fe, which I did like but I didn't like the attitude of the salesman (or the reputation of the dealers) enough to go ahead with a 26k sale.
