This is a common misconception about self inflating mats.  The Thermarest FAQ page says this (emphasis mine):   

[snip]...Always allow self-inflating mattresses to inflate on their own as much as possible, then just top them off with a few breaths at the end for added firmness....[/snip] (taken from the "Will moisture build-up and ruin my mattress if I blow into it?" question).

I left the mat overnight with the valves open and it now looks really good.Its firm its expanded and now the material fits nice and snug and it looks like the picture on the box

Would i be right in thinking self inflating mats are just memory foam wrapped in waterproof/wipable material ?

Can't wait to give it a try on our next trip

Yes, simple as that. With a sealable valve so the air doesn't escape when you lay on it.
