Damian : trailer is a no no, I am a "new" driver - haven't been driving for over 10 years, so just getting used to it again, so I would not be confident enough with a trailer.
I worry about chosing the right tent at the moment, I can't afford to buy something and then find out it's not the right tent for us I originally liked SunnCamp Paragon 600, but that one is no longer available and the another one I like is Croyde 6, but I'm not sure if it's not too big for us..I wish I could go and actually look at all the tents before I buy one. decisions, decisions

Good point although if you have space for 2 SIMs with airbeds for the children I'd go for that. Or even buy an inflatable sofa bed & fleece throw to use as a sofa during the day and bed for the children at night.
I would do as Geoff said and break your stuff down into groups with an additional list for each person to cover theirpersonal needs.
Have you considered either hiring or doing a car swap with a friend or family member for the time you are on holiday. As you say you do have additional space in the back footwells.
I remember as kids in the days before car seats, me and my sister on piles of stuf in the back with our heads against the ceiling.
