2 tbsp olive oil
1 onion, chopped
2 garlic cloves, finely chopped
225g/8oz mushrooms, sliced
1 red pepper, chopped
3 chicken breasts diced
350g/12oz risotto rice
150ml/ΒΌ pint dry white wine
1.2 litres/2 pints hot vegetable stock
Pinch of saffron
Couple of pinches of mixed herbs
2 tbsp chopped fresh parsley
salt and freshly ground black pepper
Method
1. Heat the oil in a saucepan and add the onion and garlic. Fry over a gentle heat for 2-3 minutes, until softened. Add the chicken and fry until the chicken is golden brown.
2. Stir in the mushrooms, peppers, rice and coat in the oil. Pour in the wine and simmer, stirring, until the liquid has been absorbed. Add the Saffron. Add a enough of the stock to cover the contents of the frying pan and simmer, stirring again, until the liquid has been absorbed and the rice is plump and tender. Add more stock if needed
3. Season with the mixed herbs, salt and pepper before serving.
I'm feeling really quite hungry after reading all these nice recipes and ready meal ideas. I actually do not cook anything when camping or home, I help prepare food peel etc and wash up mainly as I cant cook. Play the hunter gather part build shelter So I shall get the OH to read these treads for some ideas, she love cooking and comes up with some good meals.
I hate it when people say they can't cook, if you can use a computer or drive a car or could program the video recorder when people still had them then you can cook as all of these things are more complicated than following a recipe. What does take skill is making your our recipes but following them is easy.
Don't know about tinned chicken in gravy, but my family likes it in white sauce. The best one at a reasonable price seems to be Ye Olde Oak brand. Pure chicken breast. Cheap ones tend to be just sauce. Warm it all up in one big pan with your tinned tatties, carrots, peas etc - lovely!

We've not long come back from our first ever camping trip. I'm a camping virgin lol :D
I like the sound of the camp stew, have to try that one.
I found tinned potatoes a godsend. We only had a three ring burner so it was a case of trial and error really.
Did a roast :D bought a cooked chicken from the local Somerfields, cooked the tinned potatoes, peas and carrots (or whatever veg you want really) and made the gravy with hot water from the kettle and gravy granules. Not exactly aunt bessies, but hey it was edible lol.
Also, for the kids, I cooked up some pasta and topped it off with sauce of hotdog sausages cut into cubes, dolmio bolognese sauce and sweetcorn. Can always substitute the hotdog sausages for tuna if you don't like them. They loved it! Obviously I couldn't do garlic bread, so the next best thing was garlic and coriander pitta breads lightly toasted.
I'm lucky have an OH who can make a cordon bleu meal out of and on anything. 1 gas ring and a frying pan and a disposable BBQ.
People often look at our plastc plates and bowls full of beautiful smelling and tasty food.

Well, we've only been camping once so far here but we did ok food wise. I don't like to go shopping on holiday unless we have to, that's my idea of "getting away", no grocery shopping. So I take my coolbox.
On our last trip:
Breakfast:
French Toast with hot choco mix added (big hit)
traditional English breakfast
Lunch:
Tin meats with bread
Or ate out if visiting a town
Dinner:
American style hot dogs loaded with ketsup,mustard, and stag chili
Bird's eye quarter pounder frozen burgers (these are the best frozen ones I have found yet and sometimes can find them on sale buy one get one free)
The packs of Gallo Risotto are delicious, and in general I detest any packet food, but they are a real must, different flavours available, and you can always add to them, onions, mushrooms, meat, etc.,

great ides everyone, we need to go get some stuff for our trip next week so i think i will keep a look out for some of these bits, we are trying to go on the cheap this time so this lot will be very handy,
we only have one cool box but i have lots of icepacks, i freeze the milk, and any meat we intend on using, then i take lots of dried or tinned/jarred stuff, last time it was a jar of brockwurst sausages for hotdogs and beans, thin cut minute steaks from asdas with melted cheese on top in crusty bread, and a bbq with new tates,
for lunch we just tended to eat on the hop, so whatever the kids fancied, jam butties, crisps, fruit ect,
