I find that the trick is to bring items which have a dual use, ie bring a seive which acts as a collander, bring plastic bowls of varying sizes which act as prep bowls and serving bowls. Bring a plastic box with an assortment of tiny jars with salt pepper herbs spices and stock cubes. Bring a deep frying pan which acts a saucepan and a frying pan. etc etc.

Start with the bear minimum you think you can cope with (with a few luxury items thrown in), slowly build your way up to needing another car, trailer etc, then you're CAMPING. Then you can spend your time away working out what you don't need to take with you, what will double up as something else, what would be more useful than the thing you already have, and what else you could possibly need. Then your'll find, your've probably got as much, "not needed any more but will keep in case" stuff stored in the loft for years to come.
On the point of windbreaks, it like many items, you take them, then not need them or can't use them due to weather etc, leave them at home and you get there to realise you should have them!!!

We've restricted ourselves to just the car boot (oh and on us and under us!). Gave up on the wind-brake, too. It's the first thing to blow away when it's windy anyway! However, IMO, I think LESS is CAMPING! We took 2 stools last time but usually sit on the picnic rug, or the nearest log or rock! We always take our wok which is strong enough to withstand a fire. If we can't have a fire we use the BBQ or stove which just sits on the ground! I like the kids to learn how to rough it!
I am one of these make do people and OH is one of those can't do without so am fighting constantly with what to take and what not, which as it's our first time camping soon am looking forward to or dreading the "I told you so" moments which are sure to happen!
