Eggs are great, you can be creative with omelettes, scrambled, fried, hard boiled, or bubble and squeak, add noodles or chopped salad veg, meat, fish, nuts, seeds, its an easy way to add fresh local produce etc and all you need is a good non stick saucepan and plastic spatula
We store eggs in a plastic container or bag in a bucket of cold water, keep it in the shade , its amazing how cold it keeps it, we keep the milk and beer in there too!
Have you got a 'The Works' shop near you? (They sell cheap books, craft stuff etc)
I bought a camping cook book in there the other week, it's really good! Best of all it was in the 'buy 2 for £5' offer, so I bought a normal cook book too - the cover price on the camping cook book is £10 so it was a bargain.
I'll try and find a link to it online, there's ideas in there for cooking on 1 ring, normal camp stove, BBQ, open fire etc so it covers all angles

I'm afraid that we weren't that impressed with the Striped Box Food Company - received 2 deliveries with split food bags (which had to be thrown), 1 delivery with the boxes really squashed and the other contained food bags that were not very clean.
The company was very professional on taking our concerns on board (and we could have just been unlucky, as other people seem to be OK with them) but we have decided not to use them again.
We'd recommend checking the edge seals carefully before use and storage (as splits can be difficult to spot) and take note of any use by date labels.
We are going back to traditional camp stove cooking...

I have a mini wok, would it be a bit ambitious to do stir fries?! I was thinking of fajita's too, stirfry the meat and vey in the wok, and warm the tortillas under the grill!
Is that a bit silly for a first time novice camper, lol!!

4princesses, we use a one bag beef sweet chilli noodles or chicken sweet and sour noodles, straight into the frying pan, I'll ask the missus where 'we' buy them from. Really tasty, we usually whack two packets in the pan and that does about three people.

Re vac meals that dont need fridges & are easy to cook. Have a look at http://www.lookwhatwefound.co.uk/Page/Index.aspx we used them last year & they tasted nice.
We like Mattersons Smoked Pork Sausage in a tomato sauce with pasta - you don't need to refrigerate it until you've opened the packet (but if you're cooking for 4 there won't be any left). Just slice, fry in a little oil (with some garlic and dried chilli if you like it) add a tin or two of chopped tomatoes, plenty of black pepper and simmer until thickened a little. Serve with pasta or rice. Or for a more authentic version use chorizo.
