Not trying to dissuade you in any way, it sounds like quite a fun thing (but that's coming from someone with remarkably few exclusions from my diet), but cooking for strangers can become a nightmare!
I organise a group rally each year for around 30 individuals, and we have a communal BBQ where we provide the food - how difficult can that be you ask!!!!
We'll, there's the carnivores and the veggies, (separate BBQs AND tools for each so as not to 'contaminate' the veggie stuff with meat juices etc.), then there's the food intolerant (gluten free, additive free etc.) factions in EACH group, then there's the 'fadists' who will only eat certain things but not others, etc. etc.
It REALLY isn't straightforward! .... and that's cooking individual easily identified items! When you start chucking a mix in a pot for instance, stew type things, then you HAVE to have a list of EVERYTHING that is included to allow people to opt out if it contains something they can't or won't eat..... and then ideally there needs to be an alternative they CAN/WILL eat!
It needs organising in advance, with offerings detailed and takers/objectors noted, if done ad-hoc, there'll likely be people going hungry!
We organise in advance and TELL people we'll have meaty burgers and sausages, and veggie burgers and sausages, bread rolls and gluten free alternatives and take pre-orders, outside that, they are welcome to bring their own food and cook it on the provided BBQs, and join our happy clan whilst we eat together. It pretty much works, but we'd be way out of our depth trying to provide for everybody's different needs directly ourselves!
Good luck
