Air beams are usually safety tested to a much higher pressure than 'operating' pressure, so operating pressure should be perfectly safe.
I tend to pump my caravan airbeam awning to slightly less than recommended pressure UNLESS it's windy, then it's recommended pressure.
What you have to allow for is variation in air pressure with temperature change, whereby the (usually daytime in sun) max pressure will drop slightly in the chiller night temps. If you start too low, it may become a little soft and vulnerable to wind overnight or on a chill day. I believe they have a pressure relief valve, so cannot be overinflated, and will vent excess on a really hot day.
By all means use slightly less than 7psi, but be prepared to pump it up in winds or chillier temps.
