I have a Thetford n3097 fridge which I want to test on mains before instllation, not towing any more so van is static, I understand that it needs 12v supply to work. Any Ideas

You're correct, it needs a 12v supply to power the control panel/electronics, otherwise the cooling power, regardless of 12v(separate to 12v control source)/240v/gas will not work.
If familiar with absorption type fridges, you'll realise they take a long time to chill down, 8 hours or more to reach normal fridge temps, but after an hour you should be able to detect noticeable chilling in the icebox/freezer and on the fridge inside heat exchanger fins. So a test run is not a 5 minute turn it on, confirm it's working exercise. For what it's worth, the 12V cooling draws do much current, it can only be sourced from a running vehicle engine or some other high powered source, it'll drain a battery in a few hours and before fridge is really cold.
