Can't speak for that specific van, but the general construction of caravans is basically from the inside out, where units are placed on the floor, then the wall frames etc, are fitted, then the interior units secured to the walls, then the outer skin is fitted, this often means that fasteners for interior fittings are no longer accessible, sometimes a little butchery is necessary to remove fittings. A very thin 'blade' slipped behind unit if gap permits and slid along until it hits a hidden fastener is one way of finding their location, a metal detector (cable/stud finding type) may help, but risk of false location due to electric cables and frame fasteners etc. Caravans are not built to be taken apart in any non-destructive way!

Interesting video that is typical of general construction methods: https://youtu.be/mHluQGHCxp0

If you do manage to remove the fittings you describe, expect to refit them or any substitute by a different method such as furniture fixing blocks such as these: https://www.screwfix.com/p/white-assembly-joint-x-10-pack/25399

Good luck.
