The Vango Icarus 500 is fairly easy to put up by one person. I have done this myself when we had one about a year or so ago. I am 60 yrs..
There are a few similar tunnel tents all with 3 or 4 poles.
I am sure others will be along with ideas..

How tall are you, and how fit do you rate yourself?
I am 5'2 and can still get up and down the stairs with ease, and can put up the Khyam Freelander myself.
I have a Khyam Excelsior XL that I cannot put up on my own, however, some people could put up the smaller version that is the Chatworth on their own.
The Khyam Rapidex pole system makes their quick erect tents easy to put up, worth having a look.
If weight and space is not an issue, then consider a Dutch pyramid tent, as I can pitch my Hypercamp Escala 4 on my own.

I recently got a Vango Midas 400 for myself and two small dogs and it's brilliant. Vis-a-vis tunnel design with two bedrooms, good head height, good living area, sig, and absolutely dead easy for one person to put up

Hi
Im an "oldie" but 5 years younger than you. As Gary has already mentioned for ease of actual putting up an inflatable tent would be hard to beat if your budget will run to it.
However most of the smaller 3 poled tents ie Vango Icarus, Outwell Nevada M are pretty easy to do especially if you use the correct method. Have a look at the video in the link below on how to do it. The guy in the video does look a bit scary but dont let that put you off he does seem to know what he is doing. Pitching Cross Camping style

Everything has been said before, but since nobody ever listens we have to keep going back and saying it all over again and again and again
Outwell Nevada M is very easy to put up & take down on your own . Pack size not to big or heavy either . The whole tent is tall enough to stand up in & it has 2 sleeping compartments .
Great tent all round .
Don't want to seem cheeky , but I have one for sale , that's as new , in the ad section if your interested .
I know this is a bit late but I too want to start camping with my dog at 60 years old...I have just bought a bergaus

Hello, what is your budget? And do you want a fully sewn in groundsheet throughout the tent? What kind of weight can you lift? Are there restrictions on the pack size ( depending on your transport, how big a bundle can it be)?
Are there tents you have been in in the past that you liked?

be wary of inflateable tents - they are easy to pump up ( especially with electric pump ) ...
thats the only bit thats easy!
they tend ( because the air tubes are built-into the tent ) to be very big heavy and bulky to lift / carry - before you buy, ask to see the pack size - try lifting and carrying it around - some folks are shocked because they dont even give the pack size any thoughts till they pay for it and then next thing - bam! ... theres your tent sir!
i dont know your budget, but i very much like the deal from Go - i bought one - for 250.00 the 2 bedrooms Outwell Torrance tent - very easy to put up with fibreglass poles all the same size except the one over the bedroom ( color coded ) and its got a great size living space with a practical flat front and curtains all round with 3 height postions. for the money, its a great tent.

The Coleman Instant tents are very easy to manage if you are by yourself. If you look at the tent reviews section, you'll see 3 of these tents reviewed under the Coleman tab, they are the Instant 4, Instant 5 and Instant Tourer.
The packed size is quite large but they are fairly light and you get a good sized tent to live in. They go up by way of umbrella type fixings, very quick and easy!
I hope you find something to suit you and have a lovely time this summer with your camping.
