I wasn't sure which forum to post this in so apologies if this is the wrong one.
I really need some inspiration for cooking meals on a two burner gas stove. Only away for 3 nights but with a husband and two young boys to feed I need to know exactly what I am going to cook.
Will probably do a pasta dish for one of the nights and thought I could 'create' something magical using Smash but other than that I am stumped. We will have a fridge so can do sarnies for lunch.
All ideas gratefully received.
Thank you.

Fajita's are always good... Old El Paso also do a rice meal kit that you add chicken & peppers too, that looked quite good. Risotto good too. BBQ always fun!
Bulghar wheat. It's one of my favourite foods of all time.
You cook it kind of like couscous, by absorption, so it doesn't even take up a burner once you've boiled the kettle.
Put Bulghar wheat in bowl.
Sprinkle stock on top (we use Swiss veg Bouillon)
Cover by about 1cm with boiling water. Stir once, cover and leave it alone.
Chop into small pieces some peppers, cherry tomatoes, cucumber (and anything else you fancy - I like to add lightly fried mushrooms but the kids don't like these).
After about twenty minutes stir the vegetables into the Bulghar wheat. Leave for another few minutes (up to about ten minutes until all the water is absorbed and the flavours have mixed). Also add some fresh herbs if you have them.
I LOVE this with some fried halloumi, but it's great with sausages, or as an accompaniment to pretty much anything.

I highly recommend this book http://www.amazon.co.uk/Family-Camping-Cookbook-Tiff-Easton/dp/1848990081/ref=sr_1_1?ie=UTF8&qid=1376248382&sr=8-1&keywords=family+camping+cookbook
Before our trip this year we all had fun looking through and picking out our favourite recipes to try. The hints and tips and store cupboard basics were genuinely helpful.
The campfire cassoulet was a particularly big hit with everyone.
I also made a big pot of chili and froze it before we went. It helped to keep the cool box cold and was perfect for dinner the third night with tortillas, grated cheese and sour cream. Yum!
Brilliant ideas. Thank you. Will take a look at Pinterest and the Family Camping Cookbook. Love the idea of risotto but will probably use Orzo as it is quicker to cook. Fab idea re. the chilli.
Many thanks again.

Apparently Mr. Mash and Lidl's instant mash potato with nutmeg are much better than Smash.
I jazz up Mr. Mash or Lidl's own with butter, chopped spring onions and toasted sesame seeds, salt and pepper, and find it to be very tasty.
Goes extremely well with haggis fried with onions and garlic, green veg such as broccoli or Savoy cabbage, with a creamy whisky sauce. Very hearty in the winter.
How about pan-fried chorizo with vegetable with spicy cous cous, which is another firm favourite of mine?
I make spicy cous cous by pan-frying some garlic and onions, with herbs spices such as chilli flakes, ground cumin and/or coriander, dried parsley or coriander, and some butter, of course.
As for the chorizo, I just dice some up and pan-fry with whatever vegetables I may have, such as broccoli or Savoy cabbage, peppers or courgettes, with some onions, garlic, and spring onions added towards the end.

We tend to use this after the fresh and frozen "vittles" have been used but its dead simple, just use all tinned stewed steak , carrots, peas , new potatoes & a fresh chooped onion. All into 1 pan and heat it up. No real cooking needed but when served hot with a chunk of local fresh bread its takes some beating. (You can use the same stuff with come dried curry powder/garam massala powder and serve it with naans for a difference as well).
Can't wait till next week as this is high on our camping menu !!!
