If you're planning to camp sometimes with your GF then you should certainly look at 4-man tents - the general advice on here would be to get something for double the number of people actually camping.
I camp solo all the time and have a Vango Midas 400 4-man tent just for myself and two small dogs. Easy to put up,it gives me plenty of space to put things and has a reasonable-sized living area - I certainly don't consider it to be too big just for myself.

I always had 4 man tents just for me...I now have a 6 man Just 3 metal poles though and easy to erect.
You haven't actually said if you will be travelling by cycle or car. Obviously if you are travelling by cycle then weight has to be a consideration and most 4 man tents might be too heavy to carry on a bike.
In that case go for the biggest one you think you can manage on your own. The more space you have the better in my opinion. Bear in mind though that some campsites charge depending on the 'man size' of the tent even if there are only two of you in it. I always make it clear that I am a solo camper despite the size of my tent and in many cases campsites will offer a solo (or age) concession.

If so, (bit of a silly question) but what do you do... Eg cycling or just walking, or what?
Yes, I camp on my own all the time with my two little dogs. One of my hobbies is photography so I use a camp site as a base to explore the area I'm staying in. I usually decide where I'm going each day then go out mid morning and don't return to the site until early evening, or if I'm having a 'chill out day' I'll walk the dogs within a mile or so's radius of the site. One of my other hobbies is writing my blog so many of the photos I take end up on there.

Yes, I usually camp on my own. I look for areas of scenic or historical interest, beaches, canals, rivers, lakes, monuments, old houses, castles etc; then look for a campsite within walking distance of whatever I have gone to see.
On the first day after setting up I will go for a walk locally. Mainly just a quick reconnoitre...and to check out the local hostelries for my evening meal/drink. That evening I will find a local pub, have a meal, and usually manage to find a local inhabitant or two who, over a pint, will tell me the best places to go and what to see and do.
The next day, usually after a nice cooked breakfast at a local cafe or pub, I go off in earnest to spend the day walking the area, taking photos, and generally enjoying the scenery, the area and whatever interesting things I find to do. Lunch somewhere nice.
Back to the tent late afternoon for a rest and wash before out in the evening for another meal and a pint. Then back for an early night ready for the morning departure.
Sometimes the initial reconnoitre on day one turns out to be enough time to see all I want to see or all there is to see (some places can be very disappointing) and then I may only stay the one night.

I camp on my own too. I'm a 40 year old solo female with a springer spaniel and I use a 4 berth tent. I go for long walks as I can't really cycle because the dog tries to run under the wheels.
my Concorde L is a 6 berth tent ( yeah right!!! ) i camp on my own mostly and i am comfortable - there certainly isnt room for a party once everything is in!
hence i got the 2 extensions for it - 1 front which makes the tent 9m long, and a side extension.
way more roomy then!
