I've just purchased and quickly returned this tent.
It was nice and cheap for my first backpacking tent, but when I pitched it at home found that the foot end poles are too taught for the sleeve on the inner. It feels as though the material is under too much tension and doesn't lie evenly across the middle of the pole (as in central, it's pulling more to one side).
I released the tensioner but still too taught. I had a play with another in the shop in case it was the one I picked up and found the same, even with the Phoxx 2!
Is this a known issue with the model? Is this a tent thing? (My Aldi 6 berth tent did the same)
Any recommendations for a sturdy one man with a vestibule for cooking in the rain?

Yes it is, if you look at several reviews on line, although not causing any problems.
Have you looked at the OEX Bobcat?
DEcathlon, do two well thought of "lightweight" tents with vestibules.
Vango do hundreds it seems! ( I do have a Halo 200....)
Wild Country Zephos (if I have the name right) and many others....MSR, OneTigris and so forth.......
Can't comment on backpacking tents as very much not my thing.
'Too tight, never going to fit' flexible poles is pretty common on new tents, the fabric of the flysheet needs to stretch over time/few uses before the poles feel like they are a comfortable fit. Had tents where you really feel like they put the wrong poles in the pack, such is the strain/effort needed to get into place. You really have to ensure the pole sleeve is worked/encouraged along the pole as much as possible to aid in the task.

The thing I don't like about the Phoxx is that it is inner pitch first....
However, a similar tent that might meet your requirements is the Vango Starav 200. The is a review with photos in the review section....
