Our Event Shelter has a long-term problem with leaking roof seams in anything more than light rain, and it's now well beyond any guarantee period.
I've tried NikWaxing it, which reduced the problem but never quite solved it.
Sewing strips on, given the light material and the amount of tension it's under, would seem too challenging and likely to make it worse.
Any recommendations other than Gaffer tape would be welcome, please.
Is there for example a good seam sealer gunk you know of?

Tent's have taped and sealed seams (on the inside) to prevent water ingress through the stitching, not sure that an event shelter would, certainly my beach shelter doesn't!
There are a fair number of 'seam sealers' on the market, they are like a thick glue. I've used one (can't remember the brand) a while ago to reseal a tent where the sealing tape had lifted, and it was very successful.
Sealing the entire length of a seam that wasn't sealed at manufacture is tedious, and likely to require a few tubes of sealer to complete, but doable.
You would have to ensure the sealer was ABSOLUTELY dry before folding the shelter, otherwise you'd find the shelter sticking to itself all over the place! Dusting dry sealant with French Chalk/Talc helps take away the slightly sticky surface that has a tendency to stick to itself if coming into contact.
I wouldn't consider using gaffer or any other similar tape, they tend to fail with prolonged exposure to sun, leaving an adhesive residue that is very difficult to remove and with great risk of damaging the fabric in trying, but prevents successful replacement tapes sticking well.
May be a combination, when erected, poles may be in way in some places, otherwise (apart from difficulty of working overhead!) seams are probably easier to access, and certainly easier to keep the 'gunk' off places you don't want it. Laying flat, you'll probably only be able to do short sections at a time and then have to allow hours for 'gunk' to dry.
