We also has the same idea this year & I got some really good replies on a thread about outdoor activity centres in the Campsite forum. The area around Aviemore seemed particularly good.
Other places we've been looking at are http://www.activity-centre.com/index.php which is in the lakes & does day session in ghyll scrambling and also http://www.activityuk.com/ in Wales which does daily activities for children. A campsite that I found in Shropshire had a handy activity centre close by http://www.sytchecaravanandcamping.co.uk/.
I found it quite hard to find activity centres that weren't residential though, probably like you, I wanted some freedom rather than having to stick to a daily schedule.
