When I was camping under canvas, my last 2 tents were cotton canvas Dutch pyramids with either a zipped in groundsheet or sewn in groundsheet.
Very cosy when heated using a fan heater no more than 2kW power, with dual heat output and thermostatically controlled.
I always camped with EHU so it was not an issue for me to have a fan heater inside the tent.
I wore a hat to bed, slept on raised camp bed with a SIM on top, secured using a fitted flannel sheet. 13 Tog combined duvet on top.
My cooker was a 2-burner Coleman Dual Fuel 424, and it worked very well at low temperature.
Some sites would allow a tenter to pitch on the hard standing during winter. However, it could damage the groundsheet until it is pea gravels like those use in All Weather Pitches.

No one has mentioned the loo. Your girlfriend might not be keen on taking a shovel and tissues out into the frosty night to dig a hole and bare herself. The farmer won’t be keen on toileting in his field either. You’ll need a portapotti in the tent or a bucket with a bin liner and cat litter & she’ll need zero embarrassment about zero privacy.
Alternatively, go to a basic site (without EHU, if you don’t want it) but with a flushing toilet. The Camping & Caravan Club has basic Certificated Sites, you may be able to stay without being a club member, no harm asking. They’re small sites too so you may well be on your own. And some are associated with pubs, pubs with roaring log fires….
