we have a coolbox but we still take quite a bit of dried foods for ease ... packet pastas and things like super noodles, tinned stuff like macaroni cheese, tinned chiili con carne or spag bol, cous cous and rice etc ....
tins might be bit heavy if you are carrying everything but packet stuff will be lighter.
The first trip we went on we just used a bucket filled with ice to keep the milk and lager cold!!! You could maybe take a small trug as they are flexible
We have a coolbag for taking fresh food to our caravan. I usually manage to get any other food packets and a loaf in it too. It also has a picnic set in another pocket on the front. Two melamine plates, plastic glasses, cutlery (proper stuff, not plastic!) salt and pepper containers and a couple of plastic boxes - oh, and the very necessary corkscrew to open your wine!

Just a cheapie one from a supermarket, if it leaks put some duck tape over the joints where it leaks, that's what we have done! It also helps if you change the water every now and again for some fresh cold stuff!
Dont buy any more prerishables than you can eat in a day . the rest of the time use packet tins etc . a small cool bag works well and if your out for the day bury it under sleeping bags they work at keeping things cool too !

Try googling food for Duke of Edinburgh award as my daughter has done it and all their food has to be taken with them in their rucksacks. you should come up with lots of lightweight food ideas that don't need refrigeration. I can recommend the dolmio stir in sauces that go with pasta. they are really small and lightweight and are actually quite tasty, also pitas and wraps dont ake up much room and dont get squashed to easily.

If you pitch by a resevoir or stream, put your milk in a strong carrier bag, tie the handles, attach a guy line through knotted handles & peg out other end of guy line - your milk will keep perfectly fresh.
If you want to take frozen bacon & sausage with you, carry it in a small coolbag with plenty of bubble wrap to line it.
When you book a campsite, always ask the owner whether they have a fridge & freezer for use by campers. Many of them do now.
