If you are talking about oven chips it's very easy. Wipe boths sides of skillet with a little bit of oil. Pre-warm both sides of skillet, put in chips and cook on a very low flame ( if using as an oven the key seems to be keeping the flame at alow setting). Turn the skillets over and give the chips a shake every five mins or so.
If you are talking about fresh chips and deep fat frying i'm not sure i would fancy the risk.
firstly cook your chips in water for about 15 mins,then cool in cold water,dry off with kitchen towel,put a lttle oil in the skillet on a medium heat toss the chips in and turn regulary till cooked and golden brown,drain any exccess oil on a paper towel,sprinkle with a little salt and vinegar,....... loverly on thick bread and butter for a saanni, I like stong pickled onion vinergar on chips.

Join pans together - warm them - very lightly oil both pans - add spuds ..... cut into small cubes - as wedges - or normal chips ....
Cook on med heat, turning from time to time .... nice to add red onion .... you know when there done, the pan feels a lot lighter and the spuds don't thud as you turn them lol
Most times we don't even bother to peel the spuds ..... chop and cook lol
mmm...think that sounds pretty easy .will try out soon.tells u in instructions that u can cook chips but not ow 2 do them ...let u no ow i get on.thnks .ps will try the onion mmmm !
