I've had my small size double skillet for years, and have always been very happy with it, so last week I took the plunge and ordered the cook book.
Have never tried baking or roasting anything other than jacket potatoes, but thought I'd give the roast chicken a go. Bought a small fresh free range one to make sure it would fit in the pan. Followed the cookbook to the letter...i.e heat lipped pan on low and brown the meat (chicken) all over. Add potatoes round the edges (not par boiled), clip other pan to the top and leave to cook, diffuser underneath on low,
Took pan off 45 mins later and taa daahh................
Very pale chicken sitting in about 2" of liquid, and potatoes boiled to death. Chicken obviously very moist, but not even close to a roast
What did I do wrong, or will I just go back to using the Cobb? Love our Cobb, and no problems with roasts, but was hoping to use the skillet more at home.
I used my double skillet for thefirst time at home and attempted a roast chicken too. exactly the same result as you - a steamed chicken and veg. I still consumed the meal but steamed chicken does have a strange smell about it! That aside - it was pretty far from roasted.
I got one for christmas and have cooked roast chicken without any probs with potatoes. I did not use the diffuser though when cooking roasts. Pots are not as crispy with oven baked, but are quiet good, I browned the chicken off first in the pan so it didn't look anemic.
Imhave played around with other stuff too to get used to it before taking it camping.

Hi we did a roast chicken last year I agree its not as crispy as in our home oven but there was no water and the chicken and potaoes were golden the meal was lovely but we did not use the diffuser will be doing a few roasts this year.
