My car cuts off electricity supply to the two 12V sockets when I turn off the engine, which I believe is a good safety feature.

Yep the more advanced portable fridges units from Waeco like the CF range, can be set so that they power of before running your battery flat, in fact they have 3 settings for that feature.
There is also available on the market, an adaptor that you can connect to your cooler, which will sense battery status, and shut of power to the cooler to save running the battery flat.
Like others our car shuts of power to the 12v socket in the boot, VW Golf, and I do find that feature most annoying although I understand why.
So for our icle Waeco CF25 we have a leisure battery in the boot, which keeps the Waeco going when the car is parked up.
