With an expresso machine, percolator, filter or caffetiere you can put in whatever coffee you like. With a pod machine you are limited to what the pod manufacturer will let you

If you can’t find anything to your liking from Nespresso’s own range, there are plenty of 3rd party offerings (Cafedirect, Percol, Dualit, cafepod, Taylors etc...) for Nespresso machines.
Failing that, (and it sort of defeats the object of a pod machine - convenience) you can put whatever you like into these:

After recent holidays to Rome and Spain. coffee machines in the apartments, we have both enjoyed the Coffee experience, and are thinking of buying a machine. The thing that is holding us back is the thought of the plastic pod waste.
Are they recyclable, or can they be reused/refilled.

The Nespresso ones are aluminium, collected and recycled when you order pods. Personally, I think the pods are reasonably priced for the excellent quality coffee they deliver, especially if you consider the price of good coffee in an outlet. My most recent Nespresso machine was 'free' when I joined the Nespresso Club. As I use their coffee anyway it is win win!
