Hi,
Cooked my first cobb roast this weekend. Everything went very well except for the potatoes. OK, but not great. Can anyone give me their hints and tips for roasting potatoes in the Cobb? Thanks

When I did the roast duck.. I parboiled the potatoes and dropped them in the moat and allowed the duck fat to drip all over them..... They were brilliant.

Have pots peeled or still with skin on ..... dip in a little olive oil - and place around the meat .... usually do them just after the meat has been brown off

We parboil, drizzle with olive oil and then pop them with the meat

I have par boiled any when I have roasted them, just added them to the moat. Used small new potatos.

Where the same as sue, we just use small new potatoes and put them in the moat, or we've used the frozen aunt bessies, they where good. last week we tried spicey potato wedges, cut the potato up quiet thin and sprinkled with fajita spices, drizzeled with olive oil and put them in the moat, then put our lamb chump chops on, and gave them a stir after about an hour to gave them all a bit of time nearer to the coals as there was a lot of them, and then cooked in total for about 2 hours, they where fantastic.

Parboiling is the secret just as you would for roast spuds at home. I would not use new potatoes for roast ... sacrilidge.. just cut the potatoes to fit the moat.
