Best option for a lightweight cooler to carry in a bike trailer would probably be an Easicool. You just add water and it works off the evaporation method, but it is extremely light weight, fairly small too.

If space is at a premium, get one of the foldup buckets, fill it with water & drape a damp cloth over it. Put your margarine in a water-tight tupperware container & let it float in the bucket of water
