It's because in Britain it's almost impossible to find a site at short notice - you have to book months in advance for anywhere popular. However, in Europe it's not like that at all and the Europeans are used to just setting off, and finding somewhere when they 'get there'!
In June 2008 we were one of only ten occupied pitches, out of 250, on a campsite in the Ardeche! We always holiday in May/June and never book anywhere.
Once you've done it you'll love it - and the feeling of freedom it gives you that if the weather is poor, or you don't actually like the site, having arrived, that you can move on elsewhere.
