July and August are busy times, the site we were on in the Ardeche had the "Complete" sign up all the time we were there, each morning there would be folk who had spent the night outside the gate hoping to get on the site, in contrast when we went to look at sites that were more out in the sticks, then there were plenty of pitches available, so I guess you don't need to book in advance if you don't mind were you end up. although for me, after driving a 1000 miles, and doing two overnights at pre-booked B&B's it was quite reasuring to know that I was not going to be faffing around finding the main site, which of course had been booked in advance.

The French peak holiday time is mid-July to mid-August.  So after 15 August you should have far less of a problem getting onto the more popular sites. 

Otherwise, head inland a bit, to the slightly less obvious places.

I think with a tent, especially if you don't need electrics, you would have more chance than perhaps with a caravan.
