Hopefully someone will come up with specific recommendations, but meanwhile have you looked at Camp Site Search? There are a few sites there with two or three reviews.
We went some years ago and anywhere between Koblenz south to Rudesheim has lots of camp sites especially between Boppard and Oberwessel on the west bank. The area does get busy in peak weeks but you should be ok between your dates.
We have stayed a few of times on the Rhine. Once at Boppard, right on the river and a couple times in Rudesheim. One thing to be aware of it you are camping in the Rhine Valley is that there are roads and railways down both sides of the river which can cause a lot of noise. I don't mind the barges but trains running every, what seemed at 10 minute intervals, does get on your nerves a bit! At Rudesheim the river widens out so there tends to be less noise. Apart from that it is very spectacular.

We stayed at Goldene Meile near Remagen (of "Bridge at Remagen" fame) in December 2009 when we were in Germany for the Xmas markets. The site is on the rive Rhine, although the pitches near the river are taken by statics, so no chance of a pitch right by the river.
As David points out, roads and railways run right along the river along that section, but at Goldene Meile it did not seem too bad (unless it was because it was winter and we were indoors when we were not going out and therefore didn't hear it!.
We have also stayed, again in December for the Xmas markets, at Camping Berger outside of Cologne. There you can get pitches by the river, and it is also quiet, no railway close by, and the road is a very quiet road. There is a cycle path all along the Rhine and we cycled from the site to the centre of Cologne, about 4 or 5 miles, in December, and had no problem, so if you are into cycling it is a good way of getting about.
What these sites would be like in summer I wouldn't know, as we've only been in winter, we've been to the one in Cologne about 3 times now, it is nice to sit and watch the river traffic go by.
