I have never stayed at Formula 1 hotels as I like to have en-suite facilities.
Premiere Classe and Etap are cheap and cheerful. Breakfast is all you can eat continental breakfast but without cheese and cold meat. They are usually located out of town, some with places to eat near by.
Ibis and Campanile are budget tourist hotels without any frills, and Ibis is my hotel chain of choice when I am in France. Breakfast again is all you can eat, however, it has more on offer such as cheese and cold meat.
If more luxury is required, then Novotel and Mercure will do just fine.
Whatever you decide, I would advise taking your own brew kit with you, as tea and coffee making facility is not available in the likes of Ibis hotels. You would need to get a plug adaptor and they are available from big supermarkets in Calais an Boulogne.
Alternative, grab a travelling kettle with a 2-pin plug while in France if you intend to travel in Mainland Europe often.
