As a resident in Kent, I think that after the Dartford tunnel you are better driving on to the A2 then M2/A2 to Dover, it gets you straight onto Jubilee Way and into the Eastern dock terminal. On the M20 you are competing with the Shuttle traffic at Folkstone and there is much less traffic on the A2/M2 route unless you are going through the Chatham junction at rush hour. That's a popular fallacy. Choose your travel times correctly and the M25 is an absolute boon. The only time I've experienced a problem with the M25 was when they shut the bridge due to high winds and that really did cause a problem but I've only ever encountered that once and that was in the depths of winter.
You folk that live out in the "boonies" have been impregnated with all sorts of horror stories which simply aren't true.
If you think the M25 is bad, just think what your proposed journeys would be like without it! LOL
There are roadworks on it at the moment after junction 21A and the M11 going clockwise but if I was coming down from the north west and wanted to avoid as much as poss. of the M25 I'd go M6,A50,M1,A14,M11,M25 and M2 or M20 to Dover.
