There's a great thread pinned above these posts - Advice for Continental First Timers - which will give you all the 'technical' advice you need.  Camping in France is GREAT!  It's also EASY!  Roads are better for driving, so you can go longer distances, and outside of the peak four weeks (mid-July to mid-August) you can generally find pitches without needing to book except on the very largest all-singing, all-dancing sites.  Trailers (or caravans) on ferries are no problem, but you will find they add to the cost of the crossing, and depending on the size may add to the tolls you have to pay for using the toll sections of autoroutes.

We use an EHU all the time - generally this is in the price of a pitch in France, and it adds to comfort levels even in tents, if you can plug in a fridge.  Often temperatures can be hot enough to affect a coolbox and you'll find you're always refreezing blocks, or throwing things away when they've melted in the heat.  Our friends (tent campers) always pooh-poohed the idea of an electric fridge, until they had three weeks of temperatures in the high thirties.  They borrowed ours the next year, and have now bought their own.  You can rent fridges, too, but you'll still need a hook-up.

Camping gaz is widely available from supermarkets.

There are campsites to suit all - but if you must have pools, bars, restaurants, take-aways, and water-slides, and are going in peak season then you should book - but if you don't mind out of the way good-value municipal sites with few facilties then you will generally always find a pitch even in high season.

As for Autoroute Tolls in France, you will only pay the car rate, providing your trailer is under 2m in height.
