The simple answer Bob is that it has to be done right & most of it has to be done online. So you need internet access on the move & the ability to use the internet to access the info you need. Without that it is not simple & maybe not even possible.
Perhaps it is possible using other means but to make it as simple as possible you need an up to date smartphone & the ability to use it.

We downloaded our NHS ‘overseas’ certificates as pdfs and saved them on our phones in ‘files’ and ‘notes’ (I’m a bit belts and braces when official documents are concerned). We also uploaded them onto the Tous Covid app. Neither need you to be online to use them.
We’ve been in France a week now and have had no problem at all using them up to now.

What do you need to go to France? Ideally the NHS App or a printed copy of your proof of double vaccination. And a crossing booked with a ferry, flight, or Eurotunnel. That's all at the moment. You can use the NHS App to print your own proof or you can ring 119 and ask them to send a printed copy. This can be used to access campsites and venues in France. But it is better if you can use the NHS App or a downloaded scan to your phone.
What do you need to get back from France? An antigen test or a PCR test arranged through Sante.fr or by calling in at your local pharmacy and asking if they do a 'Test to Travel' with a certificate of the results. This test need to be done within 72 hours of travel. You then need to order a 'Day 2 test' for your return to the UK. You will need the reference number for this to fill in your 'Passenger Locator Form' on the UK Government website.
If you're travelling by Eurotunnel you'll need to upload all of the above to the Eurotunnel website, you booking referance page, before you set off.
So you need the internet.
And as far as 'sodding it' until next year, it may be no different next year. Last year, unvaccinated, we travelled to France and back with no differences to normal - no certificates, no proof of vaccination, nothing. This year, even double-vaccinated, the requirements changed and became much more onerous. Who is to say that next year things won't be even worse, with more proof and more Apps. Get a good smartphone, some App confidence (your children or grandchildren will help! My twenty-one month old grandson knows how to find pictures of himself on his Daddy's iphone!) and you'll be off without worrying.
We're in France at the moment, and travel isn't as easy as it was, but it isn't so difficult that two over seventies can't manage the technology.
Thank you Val for the reassurance! We have to do a dash to Burgundy at the beginning of October to help with a house clearance and just renting a suitable van has been enough hassle. Your message, plus your original one about the Tous covid site are, I think, all we need.

So far I have found all the information your looking for on the web sites of most of the transport supplier's ie euro tunnel, DFD ferries. Brittany Ferries in simple plain english.
As someone who has had problems with everything on internet mainly because I don't buy a new lap top phone or tablet every three years or so I recommend you visit your local library where there are people up to date on using modern tech and do help to download and print what ever you may need
