Just booked my tunnel crossings for next year's trip to France and the Netherlands.

Refundable tickets in case of itinerary changes as the French campsite I have planned to stay with is not accepting bookings yet!

The prices for 1 person and 1 dog were creeping up:
393.33 GBP on 03 August
411 GBP on 20 August
426 GBP on 13 September
426 GBP today 29 September - booked

I've noticed that over the last few years, tunnel, ferries, hotels, airb'n'b, even some campsites - first quote is always the cheapest then if you go back again price has gone up. Usually found that if you clear the cookie for the particular website and start again you go back to the first quote.
