Caen and St Malo have the best links to the French road network - unless you specifically want to do the extreme west of Brittany - in which case Roscoff is a no brainer.
I would ignore Cherbourg unless there is a significant cost benefit - or you want the shotest crossing time - in which case the Poole to Cherbourg crossing is the shortest run across the water.

Well, I spent some time at the weekend adding up travel costs to go from Ireland to UK and on to France.
I've pretty much decided that there is no saving to be made either in time or cost, compared to going direct from rosslare or cork.
This year we are going to try the Cork-Roscoff with Brittany ferries.
Apparently it is a lot better than the irish ferries rosslare route.
