Don't think I've ever seen an awning that doesn't have inbuilt tie backs in some form for opening panels. Certainly my Kampa and Sunncamp awnings do! You need to roll the panel fairly tightly to get the ties around.
Failing any inbuilt tie backs, how about a clamp to hold the rolled up panel, something like this: https://www.toolstation.com/roughneck-spring-clamp/p75191 , lots of similar ones in varying sizes on the market.
I take it you mean the mud flaps normally sewn to the bottom of doors/walls - no choice but leave them in place it would seem, maybe wipe the worst muck/wet off if rolling up vertically to keep it from being spread up the entire panel.
Edit! As an afterthought, certainly on my Sunncamp, the main front panel can be turned into a canopy with the use of 'King Poles' (after market purchase). That stops the sun shining into the awning and makes it more comfortable for sitting in, it also stops a lot of rain blowing in too!
