It is possible to get a van with 2 front singles, 1 x side dinette, and 3 (or just use 2) x bunks
It depends upon how tall you are - the Bailey Olympus 546 can accommodate people up to 5'9" on the two front beds - it's a 'just fits', but it can work.
Phil you also need to watch out for the narrow vans you are looking at then to see what length any made up double would be, as I don't think you will find a van with 6ft plus front bench seats anyway
If you think about the logic, the Pathfinder is 2.12m wide I believe and probably slightly narrower on the canvas bed pods as it fits inside the body when folded therefore the beds on that are just around 1.9m long from memory once bed pods liners are used?
Any caravan only around 2.13m wide will have walls maybe around 5cm thick each side say so internal max measurement cant be anymore than around 2m at absolute most assuming no wall fixed seat boards etc

Current Sprite Major 6TD gives;
- Front lounge, this converts to either a double of 2 singles.
- Fixed bunks to the rear off side
- Side dinette, this converts to a single bed, and has a pull-out bunk over.
If you are 6ft then even a 6ft3" bed with bulkhead at head & foot is going to be insufficient unless a double that you can lie diagonally across. You need a bed with nothing at foot end to give you room to stretch. Tbf unless you are prepared to compromise theres no caravan that is going to be what you want.
Fixed single beds of 6ft6" are only in German built caravans & even there you are unlikey to find the layout you want. Who are all these people you have that won't consider sleeping together?
I think you need to prioritise here Swaggy. Find a caravan with a single bed that fits you & is comfortable, then let your grandkids sleep wherever they can on whatever is left.

No prob - I seem to be getting a bit shorter every year Quite worrying, actually - five years ago I wouldn't have fitted...
The big advantage of the Olympus (and all the other Alutech vans) is the timber free construction (except the floor) It takes a shed load of worry away.
Personally, I'd do what others have suggested and get a van for you and your better half, then let the others sort it out between them.
Well I've taken the plunge. Just put a deposit on an Avondale 556 which seems to tick all the boxes. Gave it a good go over with the damp meter and all looks good.
So looks as though I'm going to be a tin tenter this season. Better get my torch ready for moving to the dark side.
