I think the situation has been adequately explained by others, but personal experience is that even on formal campsites with my caravan on the outskirts of populated areas, a mobile signal is not something to assume, I've been on countless sites where signal on any given network is totally absent, or so poor that it's unreliable/unusable!
I've done many miles and decades of hillwalking in Yorkshire, Cumbria, Devon etc. out in remote areas, and one thing I ALWAYS took for granted was that there would be NO mobile signal available, so I always had proper paper maps, compass, torch and whistle to attract attention in an emergency, with no reliance on a mobile phone for anything! I've even 'rescued' a few people over the years who were foolishly reliant on a mobile phone for online navigation which deserted them when most needed!
If you MUST have connectivity, then it's only going to happen with reliability on a satellite system! There may be a poor second cousin option with O2, they have a 'Bolt On' service for an extra £3/month that seamlessly (their words!) transfers between cellular ground antenna and satellite to give continuous coverage (their words again!) in rural areas. BUT it requires a compatible handset, and has limited data use tied to a few very specific apps. https://www.o2.co.uk/satellite
Mobile networks serve populated areas NOT empty wilderness areas! - no money in it for the networks if hardly any people. If you note the claims of all of the mobile network suppliers, they claim coverage by population numbers, meaning urban areas, NOT geographic area! Countless 'Not-Spots' really quite close to urbanisation if the terrain is unfavourable, I'm in burbs of London and my signal is very poor, can't walk around the house without risk of a call dropping!! …. and I know quite a few people who have to hang out of bedroom windows etc. to use their mobiles, and they live in towns too!
You can improve your chances of coverage if lucky enough to be in a maybe high unobstructed spot (signal is line of sight!) by having SIMS for the 3 big provider networks and using which one works best. But far from assure any will work!
