The last time I did this job there were 3 nuts and bolts. 2 about the middle and one at the front.
I took the nuts to the end of the screw thread so that the bottom of the nut was level with the bottom of the bolt. I then had to lift the carpet/lino inside the van so that it was clear of the bolt heads. Then back under the van I "persuaded" the nuts and bolt upward with a hammer until the nuts were against the steady legs. I then clamped the bolts inside the van with a Mole Wrench and then undid the nuts all the way. By leaving the nuts on the bolts when you hit them with the hammer, you will not damage the threads of the bolts. Just make sure that the bolts are level or slightly inside the nuts.
The steady legs should come away easily. If not, then push the bolts further into the van. The blunt end of an apropriate size of drill bit is probably best.
