if it was fine on youre outward journey ,i would put it down to side wind,,or wrong noseweight, even with correct set up the wind can have a great affect on the stability,

i would always reduce my towing speed,,in windy conditions,

I find on motorways with tramlines worn by the heavy lorries, that the van wheels can ride up on the edge. This makes the van try to shift itself back into the groove, and that can feel like a snake starting.
